3 medium to small zucchini - diced - large chunks 1" at least
1 small green pepper - diced
1 small onion - chopped
1 28 oz can tomatoes
3 TBSP butter
3 TBSP flour
1 tsp salt
1TBPS brown sugar
1 bay leaf
Place zucchini in a butterd casserol dish, set aside.
Melt butter in saucepan add flour. Add onion, green pepper, tomatoes, salt, brown sugar, bay leaf and cloves. Cook ingredients for 5 minutes and pour over zucchini. Cover top with bread crumbs and parmesan cheese. Baked 30 minutes at 350 degrees.
Excellent paired with homemade macaroni and cheese.
