Zucchini and Corn Saute
2 Zucchini (any variety will work), diced
3 Ears of Corn, shucked
1 TBSP Butter or olive oil
2 TBSP Fresh Basil, chopped
Saute zucchini with butter in a pan over med high heat until soft, about 5 minutes. Add the corn and saute for an additional 2 minutes until the corn is cooked through. Turn off heat and add the basil, serve immediately.
