Sauteed Garden Beet Greens served as a side to Meat or over top Pasta

  • Sauteed Garden Beet Greens served as a Side to Meat or over top Pasta

(Serves 2-4)

Bunch of Beet Greens, Stem and leaf

1 whole Apple, thinly slices

½ red onion sliced

2-3 T of olive oil

2-3 T of Balsamic Vinegar

1 T of Honey

1 tsp of cinnamon

salt and pepper to taste

1.)    Bring water to a boil in a pot and place beet steam and leaf into boiling water.  Boil for ~ 5 minutes, till limp.  Drain well.

2.)    Place skillet over medium high heat.  Add olive oil, and onion and apples.  Toss and stir around for 3-5 minutes.  Add Balsamic, Honey, cinnamon, drained beet stem and greens, and salt and pepper to taste.  Sautee for an additional 4-6 minutes. 

3.)    Serve warm as a side to roasted chicken, or cooked pasta, a choice of cheese, and drizzle with a bit more olive oil, and balsamic vinegar if need be.
