Roasted Asparagus Frittata                        

Preheat Broiler

servings:  2-4

Eggs                             6

Parmesan                     3 T.

Chives, chopped           2 T.

Roasted Asparagus       1 C.

Salt                              TT

Pepper                         TT

Oil                                1 T.


  1. Combine Eggs, asparagus, parmesan, chives, salt and pepper in a bowl.
  2. Heat oil on medium heat in a sauté pan.  Make sure the pan is oven safe
  3. Add egg mixture to pan.  Lightly pull the mixture away from the edges of the pan allowing for more liquid to flow behind set eggs.  Continue this until bottom of frittata is set. 
  4. Place pan under broiler, approx. 4 inches from flame, close door.  Finish cooking in oven.  Top of frittata will be set and golden brown.
  5. Remove from oven, slide frittata onto a plate, cut into wedges, and serve. 
  6. This can be served warm, room temperature, or used as a sandwich filling for later.
