Peach Salsa Fresca

1 large clove garlic, minced
1/2 t. seasalt
1 medium tomato, diced
1 large shallot, finely chopped
1 peach, diced
1/2 c. green pepper, diced
hot pepper, minced
2 t. lime juice
fresh chopped cilantro, to taste
honey, to taste

In medium sized mixing bowl, use a fork to mix together garlic and sea salt. Add all other ingredients except honey. (NOTE: I used one and a half Czechoslovakian black peppers from Edible Old Dominion as the hot pepper. Whatever kind of hot pepper use, start with a small amount, let the tastes meld, and add more hot if necessary. You can always add more) Allow flavors to meld for at least 30 minutes. Taste, and add more hot pepper, cilantro, and honey to taste. Best eaten the same day. Serve with chips or over fish or chicken.
