In a 1 Qt Microwave safe dish mix
2T butter, melted
1/4 c. cracker crumbs
1/4 c. chopped pecans
Microwave 2 min high, stir after 1 min.
Put on waxed paper & set aside.
Put 1/4 c. water, 1/2 t salt 1-lb summer squash (sliced) in same casserole. Microwave high 8 minutes, stir after 4 minutes, drain.
1/4 c. mayo
1 egg, beaten,
1/2 c. shredded cheddar cheese
2 T melted butter
1 1/2 t. sugar
1/4 c. chopped onion
Pour over squash -- mix
Microwave medium 4 min, stir, add crumbs, Microwave 2-4 minutes more on medium until center is set. Let set 5 minutes.
** for a 13 x 9 pan, use 4 recipes and bake in the oven at 350F until set and starting to brown**
