Boil ¼ c. cider vinegar, 2 tbs honey or maple syrup (or 3 tbs sugar), 1 lg. clove minced garlic, 1 tbs finely grated ginger, ½ tsp ground cumin, 1/8 tsp. dried hot pepper flakes (if desired) until reduced in half. Stir in 2 finely chopped green tomatoes and salt to taste. Cool and add 2 tbs chopped fresh cilantro.
