Fresh Green Salsa

Fresh Green Salsa
4 C green tomatoes, sliced or diced
1/2 C chopped onion (red or white)
2 t minced garlic
1/2 C chopped hot pepper (chile or jalapeno)
1/2 C chopped cilantro
1/2 t cumin or basil (optional)
1 T lime juice
1/2 t sugar
1/4 C water
salt and pepper to taste

Place all ingredients into a food processor and pulse until well blended. Be sure not to pulverize it; keep it chopped. After all, it is a salsa. Put in container and refrigerate. Serve with tortilla chips. (A favorite is with lime seasoned chips.)

NOTE: for a varied taste, you may wish to roast the tomatoes. To do this, keep tomatoes whole and either place them on a hot grill or in an oven under the broiler. Cook about 5-7 minutes or until skin is lightly blackened. Let them cool before putting in processor to be
chopped.
