Chinese Noodles

1 lb ground pork (or ground beef - or a mixture of beef/pork)
4 green onions (cut 1 1/2" length)
1/4 c. soy sauce
1/2 head of sliced Bok choy (can use other cabbage)
1 lb noodles (Chinese, dry noodles, egg noodles, or thin spaghetti) - cook according to package directions.
2 eggs, scrambled in a tsp. of oil
Cook noodles first. Drain and set aside.
Scramble eggs in frying pan and set aside.
In a wok - or large frying pan, brown ground pork (drain if necessary). Add green onions and soy sauce. Turn pork mixture into bowl. In the wok/pan, cook the bok choy/cabbage, until tender - stir while cooking. Add meat and noodles. Season to taste with whatever you like. (Keep in mind soy sauce is very salty). Stir in eggs and serve.
